Russian Cabbage Soup – Schi

Schi

Schi is a soup that was the most popular dish in Russia in the 19 century. There are a lot of variants how to prepare it. The main ingredients are potatoes and cabbage. The other ones can be changed.

Here is one of the simplest recipes of classical schi, but if you haven’t got any of ingredients except the main two – you still can try to prepare it.

Ingredients:

  • 2,5 meat beef water
  • 1 carrot
  • 3 potatoes
  • 200 – 300 gram of cabbage
  • 1 tomato
  • 50 gram of greens
  • Salt to taste

Method:

Make the beef meat water on low fire. During all the preparation do not allow very strong boiling. Peel and grate the carrot. Put it in the beef meat water. Then peel potatoes, if needed and cut in cubes, or slices. Add to the soup. Shred the cabbage and also put in the soup. Boil 20 minutes. Peel tomato and put it in the soup. Keep it boiling 5 minutes. Cut the greens. Remove tomato from the soup. Add the greens and boil another 5 minutes. To serve hot with sour cream and white bread.
